HOW TO EAT LIKE AN ITALIAN by Fabio Spina,
First - never order Spaghetti Bolognese! It only proves you’re a tourist, because the dish was created for the British and doesn’t actually exist in Italy. Ask for ‘Tagliatelle Bolognese’ instead.
Markets are an easy way to try truly local food. They’re not aimed at tourists, so they’re authentic – and chaotic! A good example is the Vucciria in Palermo, Sicily. It’s very exotic with vendors who’ve been there a lifetime. Try something quite incredible - like the takeaway boiled octopus.
Don’t ever join a queue in Italy. If a restaurant has a line of people outside like sheep, it’s famous for all the wrong reasons. Andstayawayfromanywherewithpictures
of its food outside. Look for somewhere family-run that looks like it has barely changed in 50 years and is all the more wonderful for it. The Trastevere area in Rome is heaven for meat-eaters. It was traditionally home to the abattoirs, so restaurants grew up around them. If you’re brave enough, order ‘pajata’ if you see it on the menu. It’s the local speciality: lambs’ intestines with milk.
Some of the most incredible local bars are under Turin’s historic arcades. They date from the 1800s, and they’re like little hidden worlds that have hardly changed since then. Caffè Mullassano is one of the best, with its homemade aperitif that comes with ‘tramezzini’, a little plate of toasts and sandwiches. If you want to  nd a good local restaurant, don’t ask your taxi driver. He’ll just take you to his friend’s place! And instead of the Michelin Guide, try slow food guide ‘Osterie & Locande d’Italia’.
In Venice, if you order Prosecco, be warned: it’s  at! Venetians don’t like bubbles. They take the glass and a little spoon, and swirl away all the  zz! Naples really
is the best place for pizza. Probably the best is Da Attillio - family-run and wonderfully eccentric. Ask for a Margherita, perhaps with a few anchovies – but please, never pineapple. That’s sacrilege.
